As it was St. Patrick's Day a few days ago and we had a few friends coming over, we decided to make Irish themed food in the most generic sense! For dessert we decided on these cupcakes - full of guinness and whiskey to match the already heavy drinking! St. Patrick's Day may be over, but I guarantee these will be re-hashed a good few times before next year!
This recipe will make 24 cupcakes.
You will need:
For the cakes:
125g Self Raising Flour
80g Cocoa Powder
1tsp Baking Powder
75g Salted Butter
350ml Guinness (slightly more than 3/4 of a can)
50ml Sunflower Oil
1 Egg (Large)
60ml Natural/Unflavoured Yoghurt

For the icing:
120g Cream Cheese (We used mascarpone)
300g Icing Sugar
1-2 shots of Whiskey (Baileys or more
Guinness would work if you prefer)
Chocolate shavings to top

1. Preheat oven to 180°C
2. Melt the butter, chocolate and Guinness together on low heat
2. Add the sunflower oil and brown sugar and mix
4. Whisk in cocoa powder
5. In a clean bowl, mix together the yoghurt and egg then add the guinness mixture and stir
6. Fold in the rest of the dry ingredients (flour, baking powder)
7. Add mixture to cupcake wrappers in a cupcake baking tray (An ice cream scoop works well here!)
7. Bake for 40-50 minutes until an inserted skewer comes out clean
8. Before beginning the icing, allow the buns to cool on a cooling rack
9. To make the icing - add the cream cheese and whiskey to a large bowl and whisk together
10. Add the icing sugar and whisk until icing is fully combined and stiff
11. Allow icing to cool in fridge for 5-10 minutes
12. Top buns with icing (with a spoon, palette knife or an icing bag!)
13. Top with chocolate shavings
Everyone really enjoyed these as a very indulgent (chocolate and boozy!) treat.
