Cauliflower Mash - Mashed Potato Alternative!





Recently we've both been trying to be healthier, which means major changes to both our diet and exercise. As we're both major carb fiends, we've been on the hunt for healthy recipes that are as moreish and satisfying as our beloved carbs. 

We thought we'd share this recipe for Cauliflower Mash with you today as it makes a great side for dinner or even a nice lunch! It really works well as an alternative to mashed potatoes. Don't worry - it's an easy one and takes all of 15 minutes to make!

You will need:
1 Head Cauliflower
1 Tbsp. Butter (or alternative)
1/4 Cup Parmesan Cheese (or alternative)
[Optional]
Granulated Garlic or 1 Garlic Clove
Chilli Flakes
Salt and Pepper

All you have to do is:

1. Chop cauliflower head into florets and boil for ten minutes (or until tender)
2. Drain florets and pat dry with kitchen towel or wring dry in muslin cloth.
3. Blend florets. I used an immersion blender here but whacking them into the food processor makes this recipe even more creamy. If you don't have either of these, a good old masher or fork will do the job - just with a lot more elbow grease!
4. Add butter and Parmesan and mix thoroughly
5. Add whichever other seasonings you like - we used a grinder which had garlic&chilli flakes here as we were eating without a sauce. You can leave these plain if you're not having a sauce/gravy etc. or add chilli, or barbecue seasoning! If you want to use fresh garlic, simply mince the clove and heat it gently in a frying pan with butter until fragrant then add to the cauliflower - Garlic mash!

It's a quick and easy recipe, but is seriously healthy and tastes really good! I doubt we'll be saying bye to potatoes anytime soon (we all need some carbs afterall), but this is a great alternative if you've overdone it a bit during the week!
