It's winter, which basically means you get to sit indoors wearing 4 pairs of socks, 2 pairs of pyjamas and putting seriously indulgent and delicious things in your face.
Since the whole Autumn/Winter period to me just puts the smells of apples, cinnamons and cloves in my nose, I decided to knock out the easiest mini apple pies to enjoy with my tea! These would also be great for parties or family gatherings during the Christmas/New Year period as they're portable.
You may notice that there's no recipe for the pastry, that's because I cheated and bought pre-made and you should too! Bonus points: If you have sad looking fruit, bung it all in and get use out of it!
To make 24 of these, you will need:
2 Sheets of Shortcrust Pastry (or 650g)
5 small Apples
1 pinch Salt
1/3 cup Golden Caster Sugar
3 Tbsp all Purpose Flour
Zest of a Medium Orange
2 Tsp Lemon Juice
1 Tsp Cinnamon
1/2 Tsp Ground Ginger
1) Preheat the oven to 180°
2) Grease and flour 2 muffin tins and set aside
3) Add the above ingredients to a bowl and combine**
4) Cut out the bottom circles (around 3-3 1/2 inches depending on your tin) and place into the muffin tin
5) Add the filling (around 1tbsp)
6) Top with circles 3/4-1 inch smaller than those used for the bottom. Remember to cut holes for the steam!
7) Rub the tops with water and sprinkle with sugar
7) Put in the oven for 18-22 minutes (or until golden brown).
**If you prefer filling that is less chunky, add the ingredients to a small saucepan with 1 Tbsp water (and some cloves!) and cook down.Super simple recipe, but great for a handheld version of a classic!
