Healthy Oat Pancakes





I am a person who really enjoys breakfast, so I am big on trying to find new ways to make indulgent breakfast meals a little bit healthier. We've been trying to be better these days (spurred on by most of our friends joining Slimming World) so I whipped these up for a quick but filling and enjoyable meal!

To make 2 portions of 4 pancakes, you will need: 

70g Oats
5tbsp Greek Yoghurt
1 tsp Vanilla Bean Extract
3 tsp Truvia
1 tsp Baking Powder
1 egg

1. Simply blend the ingredients together and set aside for 10 minutes.
2. Lightly grease a non-stick pan and add an eighth of the mix per pancake
3. Flip when the top of the pancake is covered with bubbles
4. Top with your chosen toppings!

This is a super simple recipe, which tastes ~almost~ as good as real pancakes. I topped mine with strawberries, bananas and agave nectar but if you wanted to be even healthier you could add chia seeds and nuts for healthy fats and omegas!

If you follow the Slimming World Extra Easy plan, this works out at 0.5 syns for the pancakes alone.
